Phases of Coffee Roasting
GREEN BEANS
Unroasted coffee beans that have not developed any characteristic flavors yet. Aroma is fresh, herbal, and plant-like. Green beans are hard and in raw state before the roasting process begins.
Early Yellow
Coffee beans start to take on a darker, richer color. This is when they expand and release gases formed during roasting "first crack". They develop their initial flavors, and brighter, more acidic notes. Beans are light and have retained much of their origin flavors, with acidity being prominent.
First Crack

Second Crack
Flavors become deeper and more intense, with a noticeable reduction in acidity. Smokier, bitter, and richer flavors begin to dominate, as the roasting process takes over the origin characteristics. Beans become oily, and the flavor is much more intense, with a heavier body
Italian Roast
Coffee beans are fully dark roasted and shine with the oil released during the process. The flavor is very bitter with a prominent smoky and burnt taste. Any acidity is almost entirely gone, and the flavor is dominated by the roasting process itself.

What Is Natural Process Coffee?
Before coffee ever meets the roaster, it undergoes a processing method at origin—and the natural process is one of the oldest, boldest, and most character-packed of them all.
In this method, whole coffee cherries are laid out to dry under the sun, fruit and all. As moisture evaporates from the fruit or patios, their natural sugars ferment and seep into the bean, layering it with deep sweetness and vibrant fruit notes. It's a process that demands time, attention, and plenty of sunshine—but the payoff is huge.
